The Pastry Mat
I absolutely love this silicone mat. It is so much easier than rolling pastry dough out onto a pastry board. Easy to clean, with rulers and grids of every size and description AND a conversion chart for converting all those grams and kilos into pounds and ounces, this is a MUST have! Available online or through major retailers everywhere.

Williams-Sonoma Oven Thermometer
I was really confused as to why my bakes were coming out ‘underbaked’. I tried adding more baking time, but it didn’t help. After consulting a couple of pros, it was suggested to me that my oven temperature might be off. I purchased this oven thermometer at Williams Sonoma to check the temp and my oven was consistently off by 50 degrees! I’ve had the oven calibrated and it works perfectly now!!

Citrus Lemon/Juicer/Reemer
I don’t really know what the true name for this tool is, but I do know I can’t live without it. I use a lot of lemon juice in my recipes – baking, dressings, marinades – but I refuse to use bottled lemon juice or those lemon-shaped plastic squeeze things. Yuck! Buy fresh lemons and use them! Your food will taste so much better …. just keep one of these on hand.

Digital Kitchen Scale
You may notice in my photos that I quite often use a digital kitchen scale when measuring ingredients for baking. If you want perfect bakes, this will almost guarantee perfection each time. Battery operated and easy to use, easy to clean. Stop guessing about how much to use in a recipe and just order one. I’ve had the same one for 15 years!

Bench Scraper
This a both a bench scraper and a bench knife … and absolutely essential. From scraping down your cutting board to dividing dough, cutting crusts and brownies or scooping up diced veg, you’ll wonder how you ever did without it. Don’t question the price. It’s worth it!

Stainless Steel Mixing Bowls
It might seem obvious, but so many people don’t have a good set of mixing bowls, in gradual sizes. These are stainless steel, perfect for so many uses . . . and they don’t break. Food safe and so easy to clean. You can pick up a set in most department or kitchen goods stores. I can’t live without them.
